18 Folds, One Small Story: The Craft of Xiao Long Bao
Before you taste a xiao long bao, there is a story waiting on its surface. At Sammi & Soupe Dumpling, the folds of a soup dumpling offer a small glimpse of a much larger craft: dough gathered by hand, one measured movement following another.
A pattern made by touch
Look closely at the top of a soup dumpling. The pleats draw inward like the ribs of a folding fan. Each one belongs to the next; together, they bring a flat piece of dough into a rounded form.
In the judging reference for our 2026 Xiao Long Bao Grand Master Competition, clearly defined, evenly spaced pleats, with a benchmark of at least 18, were one expression of skilled work. The number gave the judges something to observe. The deeper story was the care behind the pattern.
What a fold carries
A pleat is more than decoration. It is part of bringing the wrapper around its filling and gathering it toward the seal. The hand must keep moving while still paying attention to the dumpling taking shape.
This is what makes handcraft worth looking at. A familiar gesture can appear effortless, even when it asks for concentration and practice. Within the small circle of a dumpling, the maker is working with rhythm, balance, and restraint.
A moment before the first bite
The next time a basket arrives at your table, take a moment to notice its folds. You do not need to count them to appreciate the work they represent.
Then let the dumpling cool, lift it gently, and enjoy the part of the story that belongs to you: the first bite.
